While baking these, the aroma was absolutely delightful! It evoked the feeling that autumn had indeed come, despite the stormy weather outside.
It's incredibly simple to prepare these muffins, and they are so tasty that you wouldn't realise they are gluten free.
A few things to note before getting into the recipe:
I used homemade apple sauce as I had been given large cooking apples from a family friend from their garden, but store bought is fine I would just suggest using unsweetened to get the best flavour.
I used a stand mixer for ease, again this doesn't have to be the case and they can still be made with the simple wooden spoon and bowl.
The crumb is optional, it just adds an extra texture to the muffins
The measurements are in cups as my scales decided it was the time to die and i couldn't find my batteries!
Ingredients:
Muffins
1 1/2 cups applesauce
1/3 cup melted unsalted butter
2 large eggs
1/2 cup granulated sugar
1 teaspoon vanilla extract
1 pinch salt
1 1/2 cups gluten free flour ( I used freee plain gluten free flour)
1/4 teaspoon xanthan gum (leave it out if your flour has it in already)
1 teaspoon baking soda
1/2 teaspoon gluten free baking powder
1 tablespoon ground cinnamon
Crumb Topping - optional
1/4 cup brown sugar
2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon
1/3 cup gluten free flour
2 tablespoons melted butter
Preheat your oven to 180°C
Grab your muffin/cupcake tray and line it with cases or grease it with butter or cooking spray, depending on your preference.
Combine the 'wet' ingredients (apple sauce, melted butter, and eggs) in a large bowl or stand mixer, mixing thoroughly until well blended.
Stir in the granulated sugar, salt and vanilla extract
Stir in the 'dry' ingredients - gluten free flour, baking soda, baking power, cinnamon and xanthan gum (as said earlier leave out if your flour already has this in) and mix until fully combined.
Scoop the batter into the muffin tray
Optional crumb topping:
Combine all the dry ingredients for the crumb topping in a small bowl and mix well. Add the melted butter to the bowl and stir until the topping reaches a thick and crumbly consistency.
Sprinkle the crumb topping on top of the muffins.
Bake the muffins at 180 degrees for around 20 minutes, or until a toothpick or knife inserted into the center comes out clean. It is important to monitor your muffins closely as ovens may vary.
Allow the muffins to cool and enjoy!!
They can be stored for a few days in an air tight container!
