Blonde chocolate is delicate and can scorch easily. Melt it slowly using a low heat on the hob or in short bursts in the microwave, stirring frequently to maintain its silky texture.


3. Don’t Overmix the Batter


Once you’ve combined your wet and dry ingredients, mix just until incorporated. Over mixing can lead to dense or tough brownies.


4. Add a Crunchy Element


For extra texture, mix in chopped nuts, toffee bits, or crushed pretzels. The contrast between creamy blonde chocolate and a crunchy bite takes these brownies to the next level.

Ingredients:

250g blonde chocolate

250g unsalted butter

4 medium eggs

200g caster sugar

1 tsp vanilla essence

150g plain gluten free flour (I use freee)

Pinch of salt


  1. Line and grease a square cake tin (depending on size you may have to alter the oven time) and preheat the oven to 180°C.

  2. Melt the butter and the blonde chocolate together in a non-stick saucepan over a low heat. Keep the heat very low and stir occasionally until you have a pan of melted chocolate in front of you. Set aside and allow to cool slightly.

  3. Take a large bowl and add the eggs, sugar and vanilla essence. Beat until they are well combined.

  4. Pour the chocolate and butter into the egg and sugar bowl, stirring the mixture as you pour. It is important that the chocolate mix is not hot only slightly warm when you pour it, otherwise you risk cooking the eggs.

  5. Sift the gluten free plain flour and salt on top of the chocolate mix and stir well until all the flour is fully combined and there are no lumps at all.

  6. Pour the brownie batter into the tin and bake for 30-35 minutes for brownies with a squidgy centre - they will have a slight wobble to them when you take them out of the oven but don’t worry this is normal! You will see the top has begun to crack around the edges and the brownie will have risen slightly. If the mix is too wobbly and wet still, pop them back in for another 5-10 minutes (or for cakier brownies).

  7. Leave them to cool fully and then enjoy!
