Tips:
1. Choose the Right Gluten-Free Puff Pastry
Not all gluten-free puff pastries are created equal! Look for a high-quality brand known for producing buttery, flaky results. If you’re feeling adventurous, you can make your own gluten-free puff pastry, but store-bought options work perfectly for this recipe.
2. Keep the Pastry Cold
Gluten-free puff pastry is more delicate than traditional pastry and can soften quickly. Always keep it refrigerated until you’re ready to use it, and if it starts to feel sticky, pop it back into the fridge for a few minutes to firm up.
3. Roll with Care
When rolling out the pastry, sprinkle a light layer of gluten-free flour on your work surface and rolling pin to prevent sticking. Avoid overworking the dough, as this can compromise its flakiness.
4. Use a Sharp Knife or Cutter
For clean, crisp tree shapes, use a sharp knife or cookie cutter. A dull blade can squish the pastry, making it harder to achieve those beautiful layers when baked.
5. Don’t Overdo the Biscoff Spread
While it’s tempting to slather on as much as possible, too much filling can cause the layers to slide or prevent the pastry from crisping properly. A thin, even layer is all you need for that perfect balance of flavour and texture.
6. Seal the Edges Well
Press the edges of the pastry trees together firmly to ensure they hold their shape during baking. You can use a fork to gently press and seal the edges for added texture and a decorative touch.
7. Chill Before Baking
Once your trees are assembled, chill them in the fridge for 15–20 minutes before baking. This helps the pastry hold its shape in the oven and ensures the layers puff up beautifully.
8. Use Parchment Paper or a Silicone Mat
To prevent sticking and ensure even browning, bake your Christmas trees on parchment paper or a silicone baking mat. This also makes cleanup a breeze.
9. Watch Them Closely
Gluten-free pastry can bake a bit differently than traditional dough, so keep a close eye on your trees as they bake. Start checking for doneness around the 12-minute mark to avoid over-browning.
10. Add a Festive Finish
Once baked and cooled, dust the trees with powdered sugar to mimic snow, drizzle with melted white chocolate, or add sprinkles for extra holiday flair. These little touches make your treats look as good as they taste
Ingredients:
Ready to roll gluten free puff pastry x2
Biscoff spread
Icing sugar
Cookie cutter
Preheat the oven to 180°C
Roll out one of your puff pastry sheets onto a sheet of parchment paper
Slightly heat some Biscoff spread in the microwave and then spread evenly onto the puff pastry sheet leaving a small edge. Make sure not to put too much on as it will leak on when baked
Clearly place the other puff pastry sheet on top, making sure to line up the edges
Cut one strip horizontal near the top (for the stars) and then split the other two sections in half. You should be left with two large even sections and a small section at the top
Cut the two large sections into even pieces horizontally
Take one of the horizontal pieces and fold it on its self in an s shape 2 or 3 times, placing a skewer through it fully to hold the shape.
Cut a star out of the small top piece and thread through the skewer
Repeat this step until all the Christmas trees are completed
Bake in the oven for 10-15 minutes until golden brown. These turn quickly so keep an eye on them.
