This recipe was born out of a love for combining classics. Nutella and banana? A match made in heaven. Chocolate and banana? Another winning combo. But put them all together in a soft, banana-infused batter? That’s where the magic happens. These muffins are versatile too—perfect for a lazy Sunday morning, an afternoon snack, or even as a dessert at dinner parties. I had been on holiday also for 5 days and was craving chcolate. Once i came back and found out i had bananas left over that needed using up, i knew what to do.

Ingredients:
115g softened butter
115g light soft brown sugar
500g bananas mashed
2 medium eggs
250g gluten free plain flour
1tsp bicarbonate of soda
70g chocolate chips
Nutella (you will need a tsp or so per muffins plus extra as a topping)
Preheat your oven to 180°C
Cream together the softened butter and brown sugar until it is fluffy
Add your beaten eggs and the mashed banana and mix well.
Add your dry ingridents (gluten free plain flour, i use Freee and bicarbonate of soda) and incorporate into your mixture. Make sure to scrape the bowl to get all the flour off the side.
Finally mix in your chocolate chips.
Spoon the mixture into your muffin tray, just covering half of the case.
Add a large spoonful of Nutella into each case, and spoon the remaining mixture to cover the top.
Get a small amount of Nutella and add it to the top, using a skewer to swirl it all around to make the marble effect.
Place into the oven for 20-25 minutes, keeping an eye on them towards the end of the time to make sure they don't burn.
Cool in the tin, or carefully on a cooling rack.
